Trader of the week: Smoke Catering

We were lucky enough to sample the delights of Smoke Catering last week when they attended the Thursday Temple Quay market in Bristol.

Smoke Catering brings the tastes of Texas to the UK: using their 12 foot smoker, they prepare the best tasting meat that I’ve had the pleasure of sampling in a long while.

Robyn and Claire run the business: Robyn is an American and both of them were brought up in Somerset. After a holiday in Texas, they were inspired to set up in the UK to bring the taste of the South to the South West of England. They learnt the craft from the people that do it best: they now practice traditional Texan BBQ methods using only wood logs and really good quality meat. They  smoke the meats anywhere from 7-9hrs but have to monitor it constantly.

Using only seasoned wood logs, they create a fire in the smoker's firebox. Along it's journey through the smoker, the smoke penetrates the meat, breaking down the fats to produce a beautiful, juicy, and buttery texture.

The smoke adds a subtle, but unmistakable, hint of fire and smoke that brings back an overwhelming, comforting and age old taste of real outdoors cooking.

I sampled the Smoked Brisket: the national dish of Texas. It is also a complex cut of meat, made up of two points, a fatty end and a lean end. Smoking brisket takes time, patience and observation but can reward you with the what many consider to be the ultimate BBQ experience: Smokey smooth, tender and buttery meat under the crisp, flavorsome bark made up of spices. I teamed this with their sausage: Beef & Chilli. The sausages are hand-made at Newton Farm and you could really taste the difference. They use a beef, chilli and garlic filling then fast smoked in the big boy for 45 minutes.

For sides I tried a little roasted garlic mash and of course, I had to have some slaw. Celeriac, apple & pomegranate; Coloured cabbage & carrot with raisin; Apple & fennel and Green leaves. Absolutely delicious – it’s filling comfort food at it’s very best.
